Ingredients

1 plate
  1. 1 tablespoonvegetable oil
  2. Wide rice noodles
  3. piecesChopped Chinese broccoli (gai lan), bite-sized
  4. Pork
  5. 1large egg
  6. 1 tablespoondark soy sauce
  7. 1/2 tablespoonfish sauce
  8. 1/2 tablespoonsugar
  9. 1/4 tablespoonfermented soybean paste
  10. Fried garlic

Steps

  1. 1

    Heat a wok over medium heat and add the oil. Add the pork and stir-fry until cooked through, adding a splash of water if needed.

  2. 2

    Add the wide rice noodles and stir-fry. Crack the egg into the wok and scramble it until set.

  3. 3

    Season with the dark soy sauce, fish sauce, sugar, and fermented soybean paste.

  4. 4

    Add the Chinese broccoli and stir-fry until everything is well combined. (Tip: Blanch the Chinese broccoli first, as it takes longer to cook.)

  5. 5

    Transfer to a plate and serve.

  6. 6

    For extra flavor, serve with chili flakes, fish sauce, sugar, and lime on the side to taste.
