Heat a wok over medium heat and add the oil. Add the pork and stir-fry until cooked through, adding a splash of water if needed.

Add the wide rice noodles and stir-fry. Crack the egg into the wok and scramble it until set.

Season with the dark soy sauce, fish sauce, sugar, and fermented soybean paste.

Add the Chinese broccoli and stir-fry until everything is well combined. (Tip: Blanch the Chinese broccoli first, as it takes longer to cook.)

Transfer to a plate and serve.

For extra flavor, serve with chili flakes, fish sauce, sugar, and lime on the side to taste.
