The night before, marinate the meat as follows:

Poke the piece of meat all over with a small knife.

In a blender, combine the onion, garlic, parsley, cilantro, celery, basil, vinegar, lemon juice, wine, salt, and pepper to taste. Blend until smooth.

Pour the blended mixture over the meat in a baking dish lined with aluminum foil.

Cover the meat with the foil and refrigerate overnight.

Early in the morning, preheat the oven to 350°F (175°C) for 15 minutes. Bake the meat for about 40 minutes just to sear it. Then lower the temperature to the minimum and bake for 2 hours, or until a knife goes in easily and the meat is tender.

Remove the meat and strain the juices to prepare the sauce.

In a small pot, toast the flour over low heat. When it turns a medium brown color, remove from heat and let cool slightly.

Add the reserved juices and mix with a slotted spoon, then return to the heat, stirring constantly.

Bring the mixture to a boil and remove from heat once it thickens.

Now your pork is ready to make tacos with flour or corn tortillas, sandwiches, or simply serve with your favorite sides. At my house, I shredded the meat for delicious tacos... How would you like to enjoy it?
