Shrimp Scampi has been a family favorite for years. My mom served it with a green salad and fresh veggies. On one occasion we were out of salad fixings so we settled on some home made croutons made from French bread. For croutons, melt butter and add seasonings into a non stick skillet, toss French bread cubes in and saute until croutons absorb butter and toast lightly, set aside

In a saute pan, melt butter and seasonings, add shrimp and cook until shrimp turn pink, between 5-10mins, add cornstarch slurry to tighten liquid, do not overcook, shrimp will turn rubbery

Place croutons on individual plates, pile shrimp on top, garnish with parmesan and parsley
