Shrimp Scampi has been a family favorite for years. My mom served it with a green salad and fresh veggies. On one occasion we were out of salad fixings so we settled on some home made croutons made from French bread. We always have some around the house, and found the croutons perfect for absorbing the Scampi sauce. From our table to yours, enjoy some from a Creole kitchen, cher.

Ingredients

  1. Croutons:
  2. French bread cut into one inch cubes
  3. 2 tbspbutter
  4. to tasteparsley
  5. to tasteItalian blend seasoning
  6. to tasteTony Chachere's seasoning
  7. Scampi
  8. 2 lbsshrimp, best from the Gulf of Mexico
  9. halfstick butter
  10. to tastegarlic powder
  11. to tasteparsley
  12. to tastecelery seed
  13. to tasteItalian blend seasoning
  14. to tasteTony Chachere's seasoning
  15. cornstarch slurry
  16. Garnish:
  17. parsley
  18. fresh grated parmesan cheese

Steps

  1. 1

    For croutons, melt butter and add seasonings into a non stick skillet, toss French bread cubes in and saute until croutons absorb butter and toast lightly, set aside

  2. 2

    In a saute pan, melt butter and seasonings, add shrimp and cook until shrimp turn pink, between 5-10mins, add cornstarch slurry to tighten liquid, do not overcook, shrimp will turn rubbery

  3. 3

    Place croutons on individual plates, pile shrimp on top, garnish with parmesan and parsley

  4. 4
