Thai Basil Chicken and Rice

Needed something easy, and to use up some of the fresh basil growing like crazy in pots on my patio. So i took a Thai Basil Chicken, modified it slightly to use easier to find ingredients (in the USA), use one pan, and it cooks in like 10 minutes. Just watch the salt with the soy and fish sauce.

Thai Basil Chicken and Rice

Ingredients

15 minutes
3-4 servings
  1. 4Tbl. oil
  2. 1fresh hot chillies (to taste)
  3. 1/2onion
  4. 5 clovesgarlic
  5. 1 poundchicken
  6. 2 tsp.sugar or honey
  7. 2Tbl. soy sauce
  8. 1Tbl. fish sauce
  9. 1/3 cupchicken broth
  10. 1 bunchfresh basil
  11. 1/4 cuppeanuts optional)
  12. 2-3 cupscooked rice

Cooking Instructions

15 minutes
  1. 1

    Dice chillies, onion, garlic

  2. 2

    If using chicken pieces, dice chicken, i was using a large, very hot, jalapeno today, but any you have/like will do. Crushed red pepper will do if you don't have fresh chillies.

    In a wok/stir-fry/skillet on high heat, put oil

  4. 4

    Add diced veggies to hot oil, stir fry 1 minute

  5. 5

    Add chicken, stir for 2 minutes

  6. 6

    Add sugar/honey, soy sauce and fish sauce, stir for 1 minute

  7. 7

    Deglaze with broth, stir constantly until liquid is reduced by about half.

    Add basil and rice, turn heat down to medium. Stir until basil wilts.

    Add peanuts, stir for 1 minute

  10. 10

    Serve, garnish with sesame seeds, green onions

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
