Ingredients

  1. 2 c.Old fashion oatmeal
  2. 1 c.Slivered almonds
  3. 1/2 c.Flax seed
  4. 3 T.Unsalted butter
  5. 2/3 c.Honey
  6. 1/4 c.Light brown sugar
  7. 1 1/2 t.Pure vanilla extract
  8. 1/2 t.Almond extract
  9. 1 t.Cinnamon
  10. 1/4 t.Kosher salt
  11. 1/2 c.Apricots - dried
  12. 1/2 c.Cranberries - dried
  13. 1/4 c.Coconut flakes - unsweetened
  14. 1/2 c.Sunflower seeds

Steps

  1. 1

    Line the 8x12 baking sheet with foil then butter. Add oatmeal and almonds. Mix well and bake 350 for 10-12 min stirring occasionally.

    Transfer to mixing bowl. Add flax seed. Turn oven down to 300.

  3. 3

    Place butter, brown sugar, honey, vanilla, and salt in pan and bring to a boil over medium heat. Stir for 1 minute then pour over oatmeal mixture.

    Add dried fruit and coconut.

  5. 5

    Press in 8x12 baking sheet and bake 25-30 min. Cool 2-3 hours
