Ingredients

  1. 400 gramspurple eggplant, washed and cut into large dice
  2. 2medium-size tomatoes, peeled and chopped roughly
  3. 1stalk lemongrass, take the white part and slightly bruise
  4. 1 cmgalangal, wash and slightly bruise
  5. 1 cmginger, wash and slightly bruise
  6. 1bay leaf
  7. 5shallots, peeled and washed
  8. 3 clovesgarlic, peeled and washed
  9. 1/2 tspsalt
  10. 1/4 tspground black pepper

  1. 1

    Put in shallots, garlic, salt and ground pepper in a blender. Crush them very well.

  2. 2

    Heat oil in pan and fry the eggplant until softened then remove and set aside

    Give a little cooking oil on a pan, fry the spice that has been crushed. Stir-fry until fragrant then add the ginger, bay leaf, galangal and lemongrass.

    Add tomatoes in, fry tomatoes until the juice is shrinking.

    Finally add the eggplant in and stir-fry, mix well. Let it cook until the eggplant shrinking. Balado terong tomat ready to serve. Enjoy 😋😋😋

This looks sooo good! I was wondering, fresh lemongrass is hard to find where I live :( Is dried lemongrass a good substitute?
