Ingredients

  • Vegetable oil for frying
  • 1/2 cupcorn starch
  • Salt
  • Pepper
  • 3eggs beaten
  • 3-4 cupscoconut flakes
  • Panko (optional)
  • 3-4chicken breasts

Steps

  1. 1

    In a medium pot add 2-3 inches of oil and heat to 365*F

  2. 2

    In a bowl mix together corn starch, salt and pepper and set aside

  3. 3

    In a second bowl add eggs and lightly beat

  4. 4

    Add coconut flakes and panko (optional) to third bowl

  5. 5

    Cut chicken into cubes and season with salt and pepper

  6. 6

    Add chicken to corn starch, then egg, then coconut mixture

  7. 7

    Once all chicken cubes are breaded gently add to heated oil

  8. 8

    Once chicken turns golden brown remove from oil and place on plate with paper towels on it

  9. 9

    Serve with favorite sauce!

    I liked it plain and with honey. Sweet and sour sauce, honey mustard. Orange marmalade with chili paste mixed in
