Grease the pan with ghee, shred the knafeh dough, and press it into the pan.

Mix the cheese with orange blossom water, sugar, and mastic, then spread it over the knafeh dough. Bake in a 400°F oven until golden. Let it cool slightly, then flip it and pour cold syrup over it.

This is the dough for fine knafeh.
