Heat the pan and heat the mustered oil in high flame

Let the smoke out from the oil then slow down the flame for a minute

Add Methi seeds and mustered seeds,saute for 30-40 seconds

Now add chopped ginger and red chillies, saute for a minute

Then add Heeng and turmeric powder

Add onion and tomatoes and saute

Add salt and red chilli powder mix well so that the spices are coated evenly to the pumpkin peices

Now add some water

Lastly add amchoor (mango powder)

Taste and adjust the salt and mango powder as needed to get the balance flavour

Pumpkin luffa mix veg is ready to eat.
