Chickpea Patties

Legumes are a great source of energy and contribute to longevity. It's a shame that many adults, and even more kids, don't eat them! But we can make these chickpea patties and achieve the 'impossible'!

A few more tips:

We ate them with leftover tomato sauce from the day before and they were delicious! We also tried them with tzatziki and they were tasty again! Give them a try!

Ingredients

20 Minutes
Makes about 15 patties
  1. 1 lb (500 grams)partially cooked chickpeas
  2. 1large red onion
  3. 2 clovesgarlic
  4. 2eggs
  5. 2 tablespoonsmustard
  6. 2 slicessandwich bread
  7. 1 teaspoonsalt
  8. 2 tablespoonsolive oil
  9. black pepper
  10. oregano
  11. breadcrumbs or a little flour

    Soak the chickpeas overnight with 1 tablespoon salt and 1 tablespoon baking soda.

    The next day, rinse the chickpeas and place them in a pot. Boil for 20 minutes.

  3. 3

    Drain and let them cool slightly, then add all the remaining ingredients and blend in a food processor.

  4. 4

    Tear the bread slices into small pieces by hand.

  5. 5

    Before blending everything into a paste, remove half of the partially blended mixture and set it aside in a cup to add back later to the more finely blended mixture.

  6. 6

    Combine the two mixtures and knead until the ingredients come together into a dough you can shape into patties.

  7. 7

    If the mixture is too wet, add breadcrumbs or a little flour to firm it up. Be careful not to make it too stiff.

  8. 8

    Heat olive oil in a skillet. Once hot, add the patties and fry until golden brown.

  9. 9

    Alternatively, brush them with oil and grill them, or use a grill pan if you have one.

  10. 10

    Serve just like you would with regular meat patties.
