Ingredients

  • 1 1/2 cupsclassic rolled oats (about 190 grams)
  • 1 cupunsweetened shredded coconut (about 90 grams)
  • 3/4 cupsliced almonds (about 100 grams)
  • 1/4 cupraw sunflower seeds (about 30 grams)
  • 1/4 cupraw pumpkin seeds (about 30 grams)
  • 1/2 cupchocolate chips (about 85 grams)
  • 1/2 cupdried cherries or cranberries (about 60 grams)
  • 1/4 teaspoonsalt
  • 1/4 cupunsalted butter, cut into pieces (about 57 grams)
  • 1/4 cupbrown sugar (about 55 grams)
  • 2/3 cuphoney (about 160 ml)
  • 1 tablespoonpure vanilla extract
  • 1 teaspooncinnamon

Steps

  1. 1

    Preheat the oven to 350°F. Place the rack in the middle position and line a baking sheet with parchment paper.

    In a bowl, mix the oats, almonds, and coconut. Spread them on a baking sheet and toast for 12-15 minutes, stirring occasionally to brown evenly.

    Transfer them to a bowl and add the sunflower seeds, pumpkin seeds, chocolate chips, cranberries, salt, and cinnamon.

    Melt the butter, sugar, honey, and vanilla over medium heat. Once the mixture reaches a boil, stir and simmer for 2 more minutes.

    Pour the melted ingredients over the oat mixture and mix very well.

    With wet hands, spread the mixture on the baking sheet.

    Bake for 18-20 minutes until the mixture sets. Let it cool for at least 2 hours before cutting into pieces.
