Ingredients

  1. Fof the filo pastry
  2. 1 kgall purpose flour 
  3. 1bit of salt 
  4. 1/4 cupoil 
  5. as much water as it takes 
  6. 1little bit of tsikoudia (raki), optionally 
  7. For the filling
  8. 1 kgmizithra
  9. 250 gmalaka (cretan soft fresh cheese) 
  10. 1/4anthotyro  
  11. spearmint 
  12. egg for brushing 
  13. sesame seeds

Steps

  1. 1

    Use a bowl to put all the liquids and then gradually add the flour. 

  2. 2

    After making it, let it rest. 

  3. 3

    Put all the cheeses in a bowl and then chop the spearmint into it. Use your hands to mix so that all the cheeses integrate well. 

  4. 4

    Continue by rolling out the filo and cutting it out into squares using a square tea plate and the speciall cutter.  

  5. 5

    Place an amount of filling that equals two walnuts in each sheet and close it by taking each end and folding it to the center. 

  6. 6

    Brush with the egg and sprinkle with sesame seeds. 

  7. 7

    Bake at 200°C.
