An extremely delicious and most of all, very easy recipe for coconut cake (indokaridopita) for those who love the taste of coconut.

Steps

Cream the margarine with the sugar in a stand mixer until fluffy.

Add the eggs, the vanilla and the flour, while beating.

Finally add the shredded coconut and fold it in using a spoon.

Brush a baking tray with plenty of margarine and and bake the mixture at 180°C for about 40 minutes.

Remove it from the oven and cut it into small square pieces of the size that you like.
- 6
Prepare the syrup by boiling all the ingredients together for 5 minutes and then pour it over the coconut cake. Finally, sprinkle it with plenty of shredded coconut.
