Ingredients

  1. 1 1/4 calmond meal
  2. 1/4 cchopped dairy-free dark chocolate (cacao nibs)
  3. 1/2 cshredded unsweetened coconut
  4. 1/2 tspbaking powder
  5. 1/4 tspsalt
  6. 1/3 cbrown sugar or coconut sugar or chocolate protein powder
  7. 1egg
  8. 3 tbspcoconut oil (melted)
  9. 1/2 tspvanilla extract

Steps

    Mix almond meal, nibs, coconut, baking powder, salt and brown sugar.

  2. 2

    Beat egg until uniform in colour and doubled in value. Add the melted coconut oil and vanilla. Whisk together and then add to dry ingredients. Mix until just combined.

  3. 3

    Chill in fridge for minimum 30 minutes or even over night. Preheat oven to 375 degrees F. Shape into 1"balls and place in baking sheet about 1 1/2" apart. Press slightly to flatten a bit.

    Bake until the edges are brown, 7-10 minutes. Remove from oven and let cool before serving.
