Mix almond meal, nibs, coconut, baking powder, salt and brown sugar.

Beat egg until uniform in colour and doubled in value. Add the melted coconut oil and vanilla. Whisk together and then add to dry ingredients. Mix until just combined.

Chill in fridge for minimum 30 minutes or even over night. Preheat oven to 375 degrees F. Shape into 1"balls and place in baking sheet about 1 1/2" apart. Press slightly to flatten a bit.

Bake until the edges are brown, 7-10 minutes. Remove from oven and let cool before serving.
