Grease the baingan with oil and rost it over an open flam till is cooked. coll and Pell the skin.mash the pulp thoroughly and keep aside.

Heat the ghee in a pan,add the cumin seeds, add the ginger garlic past and saute for a few seconds.

Add onion and saute till the turn golden brown.

Add the chopped tomatoes, turmeric powder, coriander powder, red chilli powder, kasmiri red chilli powder, meat masala powder and till the mixture leaves oil.

Add the mashed baingan, garam masala powder, and dry mango powder and Salt, mix well and cook 5-10 minutes.

Serve hot garnish with chopped coriander.
