Simple and delicious. A great way to use up leftover grilled or baked chicken breast! My leftover chicken is always seasoned so I rarely add salt to this salad. The sweet cranberries and tanginess of the dijon balance each other perfectly.

Ingredients

4 servings
  1. 2small boneless skinless chicken breasts - fully cooked,chopped
  2. 2hardboiled eggs - chopped
  3. 1/2small onion - finely chopped
  4. 1/3 cupdried cranberries
  5. 1/3 cupmayonnaise
  6. 1 tbsdijon mustard
  7. to tastesalt and pepper

Cooking Instructions

  1. 1

    Place chicken, onion, cranberries, mayonnaise, and dijon in a medium bowl. Stir to combine until well blended. Taste. Add salt and pepper if desired.

    Gently fold in chopped hard boiled eggs. Cover. Refrigerate at least one hour before serving. Enjoy!

    Note: I chopped my chicken down to a little bigger than 1/4 inch pieces, and my onion to about 1/8 inch pieces. Eggs were about the same size as the chicken.
