Can't get enough of this and I use mostly unripe plantain

Peel the skin off your unripe plantain and dice to little pieces

Put inside a pot and pour water till it covers the plantain a little

Pour in all your ingredients except the vegetables and allow to simmer

You can add smoked or dry fish if you want.

Once the plantain is soft enough, add your scent leaf, allow to boil for a few mins then add the uguh.

Mix everything together, taste for salt and pepper, then bring down from the heat. Food is ready.
