Niratama (egg & chinese chives)

This is a very Japanese dish because it is simmered in dashi and some Japanese seasonings like sake, soy sauce and so on. In this recipe I made it without dashi so it's very easy but tastes good. This is a good side dish and goes well with white rice.

Steps

Combine all seasonings in a saucepan and bring to a simmer. (after boiled about 30 sec)

Add nira, stir and simmer over medium-low heat until cooked. (nira is cooked in a flash)

Pour the beaten egg evenly on surface and cook for 20~30 sec over low heat. Cover with a lid and turn off the heat. Steam the egg until desired doneness.
