Steps
- 1
Put the 1kg of beans in a sufuria and wash them to remove any dirt or dust
- 2
Place them in a big sufuria fill it with water and place the sufuria on a flame. It is advisable to use charcoal as beans tend to cook for long and if one uses gas it might finish the gas but it is up to you
- 3
Cover the sufuria with beans and let them boil for 1-2hours till they are done. Note: do not keep on removing the sufuria from the jiko as this makes it hard for the beans to cook well
- 4
After you have checked and you are satisfied with the beans you are ready to make the bean stew
- 5
Chop the onions and place them in a different sufuria add oil and them place the sufuria on the jiko or heat of your choice
- 6
Cook the onions till golden brown then add already chopped tomatoes and some garlic
- 7
Stir till you make a paste or sauce like mixture then add your already cooked beans and some carrots and capsicums for flavor
- 8
Add salt and spices for taste then stir for 10-15min add some water for the stew just a little DO NOT drown you beans in water
- 9
Cover the sufuria for 5 minutes then add some coriander then stir it in.
- 10
Serve the maharagwe with a meal of your choice.
