My love for plantain started way back. All thanks to my mum.
Steps

Wash and peel off the back of the ripe plantain and slice it to your desired shape

Preheat your deep fryer or frying pan with enough oil to enable you to deep try it

Sprinkle pinch of salt on the sliced plantain and try till it's golden
- 4
Slice the fresh tomatoes and all other vegetables and whisk the egg and set them aside
- 5
Add 1 eating spoon full of vegetable oil and add the sliced vegetable, stir and add the whisked egg, add seasoning and serve after decorating with cucumber, boiled egg and green garden egg.
