Oats, Paneer & Corn Tikkis or Cutlets

Everyone these days are focused into healthy eating. Childhood obesity is increasing day by day & we should therefore encourage our kids to eat healthy too. It is a difficult task but not impossible as few changes into their daily diet can go a long way to ensure they live a healthy life ahead & avoid lifestyle diseases.
We all love aloo tikkis (potato pattice) but they are usually deep fried or even shallow fried with a lot of oil. I have tried to make these cutlets or tikkis using only a single potato & added cottage cheese instead as they are high in protein & calcium which are beneficial to kids. No preservatives or white flour is used for binding including no bread crumbs. I have instead used oats. Since kids love corn, added the same to ensure the colour & the flavour of corn excites the kids.
Ideal to make for kids tiffin box with a paratha or whole wheat bread sandwich to go along with it.
As I say, kids are the most tough to please but I assure you that once they taste these tikkis, they will ask for more ! That's a guarantee!

Steps

Boil the potatoes. Once cool, peel the skin, grate them & keep aside

Grate or crumble the paneer / cottage cheese

I have used quaker oats & have added it as it is. In case you want, you can powder the oats too & add the same.

Add the paprika powder (optional), salt, garam masala powder, coriander leaves & mix well.

Take a small portion of the mixture & give them shape of tikkis or cutlets. Refrigerate these tikkis for a minimum of 30 mins before pan frying.

In case you are making these tikkis for the next day tiffin for kids, store the tikkis in a box & keep it in the refrigerator.

If you are making it for immediate consumption, heat a non stick pan, add few drops of oil, & then pan fry these tikkis on both sides on low flame.

Serve them hot with some Coriander chutney or tomato ketchup.
