For lunch, I usually bring rice, but sometimes I switch things up and just have a salad. But honestly, as a meat lover, I can't go without meat for too long! 😂😂😂😂

Buy vegetables from the supermarket for safety. Pick and prep them the night before (do not wash yet), then place them in a sealed bag with a paper towel to absorb moisture and store in the refrigerator. In the morning, just wash them.

In the morning, boil the chicken breast. While the chicken is cooking, wash the vegetables and soak them in salted water for 10 minutes.

Once the chicken breast is cooked, remove and let it cool, then shred it. Chop the vegetables. Put everything into a container. Bring it to work and keep it in the fridge until lunchtime. I use store-bought vinaigrette because it's easier than making my own.

When ready to eat, pour the vinaigrette over the salad and toss well. Let it sit for about 5 minutes to absorb the flavors, then enjoy!
