This is a sauce I picked up from the Labramba Hotel in Gran Canaria. It's a very popular sauce on the islands and used in all-sorts of meal set ups. There are two types, Red (made with red bell peppers for enjoying with bread, potatoes and meat) and Green (for enjoying with fish and called Mojo vérde made with green peppers). It's easy to make and edit as you go along. Enjoy

Ingredients

  • 6red bell peppers
  • 1 tbsphot paprika
  • 1 tbsppimentos (sweet paprika)
  • 1 tbspsalt
  • 6-10peeled garlic cloves
  • 1/2 cupwater
  • 1/4 cupwhite wine vinegar
  • 500 mlExtra Virgin Olive Oil

Steps

  1. 1

    De-seed and cut into strips your red bell peppers

    Add the pepper to a blender (don't start blending though)

    Take all your spices next and add them to the blender

    Also add your vinegar and water.

    Turn on the blender and as it's working, pour in the olive oil slowly. You will see the sauce change color as you do this.

    Leave it running until you have a smooth sauce. It's fine to have pepper flecks still visible but you don't want any lumps

    Once it's smooth, ensure its got enough (salt taste, garlic taste, heat or whatever else you like) and then pour into a bowl (s) for serving

    This recipe made the two small bowls above AND this so it makes plenty but we eat it with lots and it keeps well.

    People will generally spoon the sauce onto their own dish and that allows them to set the quantity. Let me know what you eat with yours. :)
