Ingredients

  • Ingredients for wheat bhatura :
  • 2 cup+ more as needed : Wheat flour / Atta
  • 3/4 cup: Milk
  • 1/4 cup: Sour Curd
  • to tasteSalt
  • 2 tbsp: Sugar
  • 1 tsp: Baking powder
  • 1 tbsp+ 1 tsp + for deep frying : Cooking Oil
  • Ingredients for Chana masala :
  • 4 cupsboiled : White chana
  • 4 tbsp: Mustard oil
  • 1 tsp: Cumin seeds
  • 2: Dry red chilli
  • to tasteSalt
  • to tasteRed chilli powder
  • to tasteCoriander powder
  • to tasteKasuri methi
  • 1 tsp: Cumin seed powder
  • to tasteChaat masala powder
  • to tasteChana masala
  • to tasteGaram masala powder
  • 1 tbsp: Imli paste
  • For grinding masala :
  • 4: Tomato
  • 2: Onion
  • 10-12 cloves: Garlic
  • 3: Green chilli
  • 1 inch: Ginger

    Method for wheat bhatura :

    In a bowl take milk, curd, salt, sugar and baking powder.

  3. 3

    Mix well till all the sugar is dissolved. Add 1 tbsp oil and mix well.

  4. 4

    Take wheat flour in a bowl and knead it with milk curd mixture for 5 mins.

  5. 5

    Add a tsp of oil over the dough and knead it again for 1 min.

  6. 6

    Cover it with a plate / bowl and let it rest for 30 min.

  7. 7

    (Don't keep it in fridge. keep it at some warm place).

  8. 8

    After 30 min knead it again for 1-2 min.

  9. 9

    Take a small ball from the dough and roll it with a rolling pin to an oval shaped bhatura.

  10. 10

    Deep fry it in hot oil.

  11. 11

    Drain and transfer wheat flour bhatura in a serving plate.

    Method for Chana masala :

    In a mixer jar add all the ingredients given for grinding. Add water little by little and grind it to a smooth paste.

    Drain water from boiled chanas.

  15. 15

    Heat mustard oil in a kadai.

  16. 16

    Add cumin seeds and dry red chilli and let it sizzle for a min.

    Add smooth tomato paste.

  18. 18

    Cook it on slow till the raw smell of tomatoes are gone and all the water evaporates.

    Add salt, red chilli powder, coriander powder, kasuri methi, cumin seed powder, chaat masala powder, chana masala powder and garam masala powder. Mix well.

    Add little water from the boiled chana and mix well.

    Add imli paste and mix well.

    Again add little water and mix.

    Now add boiled chana and mix well.

    Add chana water as required to make the gravy.

    Cook it on high for few mins.

  26. 26

    Switch off the flame.

  27. 27

    Garnish with coriander leaves.

  28. 28

    Serve hot with wheat bhatura.
