Roasted butternut and black eye beans salad
I am on a meat free meals journey.

Boil 1 cup of black eye beans until tender. (I soaked mine overnight to reduce to reduce the boiling time)

Cut butternut into small pieces, drizzle with olive oil, salt and pepper and put in oven for about 20min or until tender
- 3
For the dressing mix lime juice, coconut oil and soy sauce.

In a separate pan, sautee red onion in olive oil for about 3 minutes.

Once the beans and butternut are cooked, mix everything in a bowl then add feta cheese, chopped spring onion and avocado.
