Grease the baingan with oil & roast it on open flame till it cooked, cool it & peal it & mash the pulp thoroughly & keep aside.

Take one pan add some oil & heat it & add the ginger, green chilli saute in a few minutes

Add onion & saute till brown.

Add the tomato, salt, red chilli powder, coriander powder, & cook it for few minutes

Add mashed baingan, garam masala, mix well & cook for 10- 12 min In a low flame.

Serve hot & garnish with coriander leaves

Now, ready to eat with chapati & rice
