Ingredients

  1. 2.2 lbslamb (about 1 kilogram)
  2. Spices: salt
  3. Saffron
  4. Paprika
  5. Black pepper
  6. Ras el hanout (Moroccan spice blend for meat)
  7. Ginger
  8. leavesBay
  9. stickCinnamon
  10. Potatoes, cut into cubes, boiled and fried
  11. Dried prunes
  12. Raisins
  13. 1 piecesugar
  14. 2garlic cloves
  15. 2onions, sliced
  16. Pickled olives
  17. Dried apricots
  18. Olive oil and vegetable oil

Steps

  1. 1

    Take a tagine or heavy-bottomed pot and add 3 tablespoons each of olive oil and vegetable oil.

    Arrange the lamb in the pot, sprinkle the spices over it, and let it sit for 10 minutes. Turn the meat, then add the remaining ingredients. Cook over low heat.

  3. 3

    After cooking, add the olives, raisins, prunes, apricots, and small pieces of sugar. Add 1 cup (about 240 ml) of water. Once done, add the potatoes and serve.
