Take a tagine or heavy-bottomed pot and add 3 tablespoons each of olive oil and vegetable oil.

Arrange the lamb in the pot, sprinkle the spices over it, and let it sit for 10 minutes. Turn the meat, then add the remaining ingredients. Cook over low heat.

After cooking, add the olives, raisins, prunes, apricots, and small pieces of sugar. Add 1 cup (about 240 ml) of water. Once done, add the potatoes and serve.
