Ingredients

  1. 2 canstuna drained, 3 if you really want to taste the tuna
  2. 1 packagenoodles of your choice, i used gluten free elbow
  3. 2 cupsfrozen peas
  4. 1medium carrot shredded
  5. 1/2 cupdiced onion, i used sweet
  6. 3 tablespoonschopped fresh cilantro
  7. 1 1/2 cupsmayonnaise, you can use less or more
  8. 1 tspwhite pepper
  9. 1 tspcelery seed
  10. 2 tablespoonschopped garlic
  11. 1/2 tsppaprika
  12. 1 tbsplime juice (or lemon)
  13. Approximately 1 cup chopped fresh spinach
  14. 1 cupshredded cheese, i used colby jack
  15. 1 tbspyellow mustard

Cooking Instructions

    Cook noodles to desired consistency, i prefer a little al dente, and drain

    Add spices to noodles and mix

  3. 3

    Add carrot, onion, cilantro, peas and cheese mix well

  4. 4

    Add tuna and lime juice mix

  5. 5

    Add mayo and mustard mix well

  6. 6

    At this point you can add the spinach now or chill for about 30 minutes and then add.

  7. 7

    For added flavor you can top with siracha or ranch
