Homemade Dabeli Masala

Preparing masalas and that too like store bought is a challenging task but when prepared we feel super excited. Dabeli is one among my best street food. Nowadays it is very easy to find dabeli masala in stores but a couple of years’ back it was very difficult for me to find it. And since then I have been preparing this masala at home only.
It tastes much better than the store bought ones and I am sure you will too like it a lot.

Cooking Instructions
- 1
Dry roast coriander seeds, cumin seeds, fennel seeds, clove, peppercorn, cinnamon stick, star anise, black cardamom, and bay leaves in a pan for a minute or until fragrant on medium flame.
- 2
Transfer the contents to a plate and let them cool down.
- 3
Now dry roast grated coconut, dry red chilli and sesame seeds in the same pan for less than a minute on low flame. Make sure you stir continuously as coconut and sesame tend to burn fast.
- 4
Transfer the contents to the same plate and mix all the ingredients. Keep aside and let cool completely.
- 5
Grind the ingredients along with black salt, red chilli powder, and salt.
- 6
Take out the powdered masala into a bowl.
- 7
Add sugar and oil. Mix well.
- 8
This masala can be stored in an airtight container and kept in the refrigerator for about a year. Use whenever you need it.
- 9
"Dabeli Masala" is ready.

Chinese 5 Spice Chinese 5 Spice
I had been wanting to post a separate recipe featuring this spice blend for quite a while. I finally have the chance to do so today and in my humble opinion, this is a very underrated spice blend. Which I always wonder why. Not only you can use this on various Chinese dishes, but you can also use it as a BBQ rub or even in cakes. Once you start making your own spice blend, you will never go back to those store-bought ones. Daniel Lim -

Kombdi Sukka (Dry Chicken Masala) Kombdi Sukka (Dry Chicken Masala)
#reststyleKombadi Sukka Masala is basically a dry chicken gravy from Maharashtra where some authentic, traditional spices are used in it’s preparation alongwith coconuts. This dish tastes absolutely delicious and different from the regular chicken curry. Traditionally it is relished with vade, a type of fried flatbread similar to puri but quite different from it in texture as well as taste. This is a dish found generally in restaurants serving Malvani food in Maharashtra! The Malvan region and Kolhapur in Maharashtra are famous for some of their masalas (spice powders) such as the Malvani Masala and the Kolhapuri Kanda Lasun Masala. When combined together in coconut based gravies, they impart a delicious flavour to any dish, though in some gravies they have to be used individually. These masalas are available in various stores in Maharashtra and online too and the recipes for the same too are available on the net. Pooja M. Pandit -
Garam Masala - Indian spicemix Garam Masala - Indian spicemix
Garam masala is a delicious warm tasting spicemix from India, there are a few recipes I love to make that require this and although you can probably also find a ready-made-mix in a shop when in a hurry... a fresh homemade mix is definitely much more rich in flavour and taste. You will need a old coffee bean grinder or something similar if you use whole ingredients. If you need more, just use a bigger spoon and keep it in a closed (glass) container to keep it fresh Bart
