Ingredients

  1. 2cups
  2. self-raising flour
  3. 1/2tsp
  4. ground ginger
  5. 60g
  6. low-fat spread
  7. 1cup
  8. dried fruit medley
  9. 1/2cup
  10. caster sugar
  11. 1/4cup
  12. low-fat milk
  13. 1
  14. beaten egg
  15. 1tbsp
  16. caster sugar, extra

Cooking Instructions

    Preheat oven to 200°C (180°C fan-forced). Spray a baking tray lightly with oil. Sift flour and ground ginger into a bowl. Add spread; rub into dry ingredients using fingertips. Stir in dried fruit and caster sugar. Make a well in the center of dry ingredients. Add combined milk and egg. Mix to form a stiff dough. Place mixture in small, rough heaps on prepared tray. Sprinkle with extra caster sugar. Bake for 10-15 minutes. Transfer to a wire rack to cool
