Ingredients

  1. 1 lbItalian Sausage, Mild
  2. 1 lbItalian Sausage, Hot
  3. 2Onions, chopped
  4. 1 largeGreen Bell Pepper
  5. 4 tspGarlic, chopped
  6. 2 canFire Roasted Diced Tomatoes with Basil & Oregano
  7. 1Kosher Salt
  8. 1 cupGrated Parmesean Cheese
  9. 1/2 cupEVOO
  10. 1/2 cupParsley, dried
  11. 3 tspBasil, dried
  12. 1Parmesean Cheese
  13. 1 boxRigatoni (or any like pasta)

Cooking Instructions

    Slice up all sausage links and in frying pan, brown on all sides.

    Drain oil from pan. Add chopped onion and green pepper and saute till onion is opaque and soft.

  3. 3

    Add garlic and saute for an additional minute (too long makes the taste bitter).

  4. 4

    Add the tomatoes and simmer for approximately 10-15 minutes until sauce starts to thicken. Season with a pinch of salt.

    Meanwhile cook pasta of choice according to package directions.

    In a large mixing bowl, combine the parmesan, Basil, parsley and EVOO. Mix till well combined.

    Once pasta is done and drained, pour into mixing bowl with the cheese mixture. Add the sausage mixture. Mix well until all ingredients are incorporated well. Serve. Top with additional parmesean if desired.
