Ingredients

4 servings
  1. 1 tbspOlive oil
  2. 1 lbsmoked sausage
  3. 1 1/2 cupchopped onion
  4. 2 cloveminced garlic
  5. 2 cuplow sodium chicken broth
  6. 1 canrotel diced tomatoes and green chile
  7. 1/2 cupheavy cream
  8. 8 ozpenne pasta
  9. 1/2 tspsalt and pepper each
  10. 1 cupMonterey Jack cheese shredded
  11. 1/3 cupchopped green onions

Cooking Instructions

    heat Olive oil over medium high heat until just smoking, add sausage and onions and cook until browned

    add garlic and cook for 30 seconds

  3. 3

    add broth, cream, tomatoes, pasta, salt and pepper and stir

  4. 4

    bring to a boil, cover skillet and reduce heat to medium low. simmer until pasta is tender, about 15 minutes

  5. 5

    remove skillet from heat and stir in 1/2 cup of cheese. top with scallions and remaining cheese and broil until cheese is bubbly.
