Ingredients

  • 1 lb80/20 or higher Ground Beef
  • 1/2large Zucchini
  • 1/4medium onion, chopped
  • 1what ever other veggies you have
  • 1I used fresh corn
  • 1 stalkcelery
  • 1 tbspminced garlic
  • 1 packagesinstant potatoes /make your own
  • salt n pepper
  • pinchground cumin & coriander
  • 1 tspchili flakes

Steps

  1. 1

    Chop all veggies to a small dice even in size then in a sauté pan with a Lil oil sear them til tender not fone all the way.I used brown butter with sage!

  2. 2

    Put into bottom of the Pyrex and in the same pan start your beef,cook til just done don't over cook

    While that's cooking get your water on for potatoes, when done set aside. Preheat oven to 350°F

    Layer your beef on top of the veggies then your potatoes on top of that

  5. 5

    Bake for 20 min or till it begins to bubble..let sit for a few minutes

I'm a Chef now after being in the Bar business for over 30 yrs. I always loved cooking for my family and friends and I got my cooking chops at the Hilton hotel in Odessa,TX about 23 yrs ago when I volunteered to help out in the kitchen after our staff walked out on a strike! In one week I was offered a position to be his apprentice and recited my Certificate in 11 months! I went on to do catering for the next 18 yrs!
