Ingredients

  • 1 tbspOlive oil
  • 3 mediumonions, chopped
  • 6 cloveGarlic, smashed
  • 1 tbspFresh oregano, chopped
  • 1 tbspChili powder, divided
  • 1 tspGround cumin
  • 1Salt and pepper
  • 1 lbGround beef or bison
  • 1 canChipotle chilies in adobo sauce (7 oz)
  • 28 ozDiced tomatoes
  • 12 ozBottle dark beer
  • 3/4 cupChicken broth or water
  • 15 ozCan black beans drained and rinsed

    Heat oil in a larg saucepan over medium heat. Add onions, sure until tende, 4 minutes. Add garlic, cook 1 minute,or until softened. Stir in 2 tsp. Chili powde, cumin, , oregano and pepper. Add meat, cook 3 minutes, or until no longe pink, stirring to crumble.

    Irene 3-4 chipotle chiles canned in adobo sauce. Stir chiles, tomatoes and remaining chili powder into meat. Add beer and broth. Bring to simmer, cook uncovered, 2 hours, stirring ocassionally.

    Before serving, stir in beans. Let heat. Taste and adjust seasonings. Serves 8.
