Had some vegetables and started to go wild with creativity. While keeping in mind i want a delicious and healthy dish.

Had some vegetables and started to go wild with creativity. While keeping in mind i want a delicious and healthy dish.
Steps

Boil till soft and tender carrots, potatoes, pumpkin and cassava

Drain vegetables and place in a large bowl
- 3
Crush vegetables together and add all ingredients except the cheese.
- 4
Mix ingredients in bowl together adding the mozzarella and parmesan accordingly.
- 5
Place in a greased dish half of mixture and add both types of cheese on top
- 6
Place remaining veggie mix and added both types of cheese.
- 7
Place in pre-heated 350°F oven and bake for 25-30minutes. Enjoy
