Ingredients

  1. 2 cuppumpkin
  2. 4 stickcarrot
  3. 3 stickcassava
  4. 1 tbspchopped garlic
  5. 1 tbspchopped onion
  6. 1 1/2 cupevaporated milk
  7. 1 1/4 tbsptable margarine(low fat)
  8. 1 tspsalt
  9. 1 tspblack pepper
  10. 1mozzarella shredded cheese
  11. 1grated parmesan cheese
  12. 8 dashitalian season
  13. 1 tbspchopped chive(escallion)
  14. 1/2 cupchopped green sweet pepper
  15. 1 stickchopped celery
  16. 8 largepeeled potatoes

Steps

  1. 1

    Boil till soft and tender carrots, potatoes, pumpkin and cassava

  2. 2

    Drain vegetables and place in a large bowl

  3. 3

    Crush vegetables together and add all ingredients except the cheese.

  4. 4

    Mix ingredients in bowl together adding the mozzarella and parmesan accordingly.

  5. 5

    Place in a greased dish half of mixture and add both types of cheese on top

  6. 6

    Place remaining veggie mix and added both types of cheese.

  7. 7

    Place in pre-heated 350°F oven and bake for 25-30minutes. Enjoy
