Ingredients

4 servings
  • fish
  • 1/4 tspfresh lime zest
  • 1 tspfresh lime juice
  • 1/4 cupred bell pepper, very finely chopped
  • 1/2 cupfinely crushed tortilla chips. I used on the border brand
  • 1/3 cupmayonnaise
  • 2 tbspolive oil divided. Half for fish coating, half for drizzle on before baking.
  • 2 tbspfresh chopped cilantro
  • 1/2 tspcayenne pepper
  • 1/4 tspsalt
  • 1/4 tspsmoked paprika
  • 4talapia fillets, about 5 ounces each

Steps

  1. 1

    Preheat oven to 375°F.

  2. 2

    Mix all the ingredients together except for fish and lime juice.

  3. 3

    Coat fish fillets evenly with mix. Drizzle a little olive oil on top.

  4. 4

    On a parchment lined baking tray place fillets. Bake 15 minutes or until fish is thoroughly cooked.

  5. 5

    Squeeze fresh lime juice on top to serve.
