Ingredients

30 mins
  1. 2 tspDried oregano
  2. 1 cupFresh mushrooms
  3. 1 tspRed pepper flakes
  4. 4 cupVegetable or chicken broth
  5. 2 tbspOlive oil
  6. 1 cupEach fresh chopped vegetables such as zucchini,squash, etc. it's hodgepodge, so it's what you have
  7. 1 largeSweet bell pepper. sliced thin. I roast mine first to render flavor
  8. 1 bunchof freshly chopped basil, & parsley
  9. 12 ozDense Pasta, if using angel hair, add to the pot later, so it doesn't turn out mushy
  10. 16 ozCan of stewed tomatoes. Be sure to add the juice. I like to make my own from the guts that are discarded while preparing stuffed tomatoes. I add spices, and allow to marinate
  11. 4 cloveof freshly chopped Garlic
  12. 1 largeOnion sliced thin. I have also used diced green onion, again it's what you have

Steps

  1. 1

    Place all ingredients into a large pasta pot, pour broth, and sprinkle with pepper flakes, oregano, and oil

    Cover, bring to a boil reduce to low heat. Keeping the pot covered cook for about 10 minutes, stirring every two cook until liquid is down to about one inch

    You can add fresh grated Parmesan before serving. No sauce is necessary, but I tend to add it the next day to the leftovers
