Look over the beans removing any foreign items. Rinse the beans

Cover the beans with about 3 inches over top of beans in a pot with water add margarine/ghee here

Bring to boil add cumin garlic oregano

boil 10 minutes cover with a tight fitting lid let sit 2 hours undisturbed

Stir the beans add water if needed bring to boil add onions and salt

Boil for an hour or until beans are tender add bay leaves last 30 minutes, if using sofrito add here

Serve with rice
