Ingredients

4 servings
  • 1(12 ounce box) extra firm tofu, cubed
  • 1/2 tspgarlic powder
  • 1to 2 tablespoons soy sauce (regular or reduced sodium)
  • 1to 2 tablespoons hoisin sauce
  • 1to 2 teaspoons hot sauce (to taste)
  • 2to 4 tablespoons oil, divided
  • 1 mediumonion, chopped
  • 2garlic cloves, chopped
  • 2carrots, peeled and sliced
  • 1 cupbroccoli florets
  • 1 smallzucchini, sliced
  • 1/2 cupchopped tomatoes, 1 medium or 12 grape tomatoes
  • 1 smallhead bok choy, chopped
  • 1to 2 teaspoons soy sauce
  • 1 tspsesame oil
  • 1to 2 teaspoons hoisin sauce
  • 1 tspsweet curry powder
  • 1rice

Steps

    In a bowl, combine the tofu, garlic, soy sauce, hoisin and hot sauce.

  2. 2

    Let marinate while you prepare the vegetables.

  3. 3

    Cook rice according to the package directions.

  4. 4

    While the rice cooks, divide the oil between 2 frying pans, one for the vegetables and one for the tofu.

  5. 5

    Add the tofu to one pan and cook over medium heat, turning the cubes to brown on all sides.

  6. 6

    This will take a bit of time.

  7. 7

    Heat the vegetable pan over medium high heat.

  8. 8

    Start with the veggies that take longer to cook, and them add the softer, quicker cooking ones.

  9. 9

    Add the onions, garlic and carrots and cook for 3 to 5 minutes.

  10. 10

    Add the broccoli and cook for 3 minutes.

  11. 11

    Add the zucchini, tomatoes and bok choy and cook for 3 minutes.

  12. 12

    Add the sesame oil, hoisin, curry powder and soy sauce.

  13. 13

    Stir and cook 2 to 3 minutes, then gently blend in the cooked tofu and heat for another 1 to 2 minutes.

    Serve over rice.

    *This can also be served over noodles.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
