Ingredients

  • 1Cooking Spray
  • 6 ozUncooked Pasta (your favorite short noodle)
  • 1/4Salt (to flavor pasta water)
  • 6 ozBroccoli raw
  • 1 tspButter, light
  • 1/2 cupPanko Breadcrumbs
  • 5 tbspGrated Parmesan Cheese (divided)
  • 2 1/2 cupMilk, skilm
  • 1/3 cupFlour
  • 1 tbspcurry powder
  • 1 cupShredded Cheddar Cheese, fat free
  • 1 tspDijon Mustard
  • 1/2 tspSalt
  • 1/2 tspPepper
  • 1 lbchicken (cooked, shredded or cubed)
  • 1/2 cupshredded cheddar cheese, fat free (optional topping, doesn't change smartpoints value)

    Cook Pasta according to instructions. Add broccoli 3 minutes before Pasta is finished. Drain and return to pot.

  2. 2

    In medium saucepan melt butter over medium. Add breadcrumbs, stir frequently until golden brown. Transfer to small bowl and mix with 2 tablespoon Parmesan cheese.

    Preheat oven to 375. Coat 2 quart baking dish with cooking spray

  4. 4

    In large saucepan whisk milk, curry powder and flour together. Bring to boil, whisk frequently. Reduce heat and simmer on low for about 2 minutes.

    Remove from heat and whisk with cheddar cheese, mustard, salt, pepper, 3 tablespoons parmesan cheese

  6. 6

    Pour sauce over noodles, broccoli and chicken. Stir until well coated.

  7. 7

    Pour mixture into prepared baking dish, top with shredded cheddar cheese and then breadcrumbs

  8. 8

    Bake for 20-25 minutes until edges are bubbly

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
