Ingredients

  • 350 gramsslices beef
  • 1 tablespoon Panang curry paste
  • 10small thai eggplant
  • 2 slicesof chillies remove seeds
  • 1 cupcoconut milk
  • 1 cupcoconut cream
  • 1/2 cupchopped roasted peanuts
  • 1 tablespoonbrown sugar
  • 1/2 tablespoon + 1/2 teaspoonfish sauce

  1. 1

    In the heating deep frying pan and oil and fry curry paste till the oil trun redish colour.

  2. 2

    Add coconut cream, stir till the red oil reach the surface of coconut.

  3. 3

    Add beef, keep stirring till the beef is cooked.

  4. 4

    Add chopped peanuts, keep stirring for 10 minutes then pour in the coconut milk, eggplants and chillies.

  5. 5

    Keep stirring, gently add brown sugar, beef stock powder. and fish sauce. Let boil and cover for 20 minutes. Served with rice.
