  1. 350 gramsslices beef
  2. 1 tablespoon Panang curry paste
  3. 10small thai eggplant
  4. 2 slicesof chillies remove seeds
  5. 1 cupcoconut milk
  6. 1 cupcoconut cream
  7. 1/2 cupchopped roasted peanuts
  8. 1 tablespoonbrown sugar
  9. 1/2 tablespoon + 1/2 teaspoonfish sauce

Cooking Instructions

    In the heating deep frying pan and oil and fry curry paste till the oil trun redish colour.

    Add coconut cream, stir till the red oil reach the surface of coconut.

  3. 3

    Add beef, keep stirring till the beef is cooked.

  4. 4

    Add chopped peanuts, keep stirring for 10 minutes then pour in the coconut milk, eggplants and chillies.

  5. 5

    Keep stirring, gently add brown sugar, beef stock powder. and fish sauce. Let boil and cover for 20 minutes. Served with rice.
