Mini Muffaletta (sliders)

For those who don't know, "...The muffuletta is both a type of round Sicilian sesame bread and a popular sandwich originating among Italian immigrants in New Orleans, Louisiana using the same bread..." - Wikipedia.

It generally contains 3 types of Italian sandwich meat (usually salami, mortadella, capicola), 2 types of cheese (mozzarella and provolone), and always has a delicious olive and pickled veggie tapenade adorning the top and bottom.

Living near Kansas City, MO we make it a point to visit the River Front Market several times a year to plan a few meals around fresh and unique buys we find there. On our most recent trip I made a point to buy everything I needed for a Muffaletta (except the bread) from the Italian grocer there. Sadly, nowhere around KC have I been able to find a good loaf of Muffaletta bread, and I just don't have the time to make it from scratch... SOOOO I decided to just modify a recipe I found online and make some Muffaletta inspired sliders instead. All the flavor in personal sized bites.

Steps

  1. 1

Place pickled veggies in the bowl of a food processor. Pulse a few times to chop. Add all other tapenade ingredients. Pulse several times until you have a finely minced mixture.

  2. 2

Leave buns/rolls attached to each other. Cut in half horizontally (to make a bottom and top).

  3. 3

Spread half the tapenade on the cut side of the bottoms, spread the other half on the tops.

  4. 4

On bottoms layer salami, provolone, mortadella, mozzarella, capicola in that order. Cover with the tops.

  5. 5

Wrap assembled sliders in plastic wrap. Press down gently and evenly to squish everything together. Refrigerate 1-2 hrs for flavors to marinate.

  6. 6

When ready to serve remove from fridge, unwrap, cut apart. Enjoy!

  7. 7

Note 1: If you don't have a food processor you can finely mince the olives, veggies, and peppers by hand then mix with the remaining ingredients in a small bowl.

  8. 8

Note 2: You really do want pretty hearty rolls/buns, and do NOT want to leave it refrigerated too long, or you will end up with soggy sliders.

Cooking is a hobby and a passion of mine. I love cooking and trying new and different things. The best thing about cooking? I get to prepare delicious food for my family and friends that they (almost) always love! Lol.Many of my recipes are experiments in what I could make with what was available at the time. Many are simply my version of classic and/or popular dishes. A few are variations of recipes I have found elsewhere online but adjusted to our tastes. No matter what, though, each of my recipes is tried and tested before posting and I hope you find as much joy in preparing them as I do.
