My kids have been loving baked oatmeal in their breakfast rotations lately and it's so simple to throw together this recipe and bake them on Sunday nights to have on hand for early school mornings. I bake this recipe in muffin tins, as they're more kid friendly and can be portable, but you could bake this in a 9x9" pan instead, for about the same amount of time.

Ingredients

12 servings
  1. 3 cupsold fashioned rolled oats
  2. 2 tsp.baking powder
  3. 2 tsp.apple pie spice
  4. 1/2 tsp.additional ground cinnamon
  5. 1 cupmilk
  6. 1/2 cupunsweetened applesauce
  7. 1/4 cuppure maple syrup
  8. 1/4 cupbrown sugar
  9. 2large eggs
  10. 1/2 tsp.vanilla extract
  11. 1/2 cupwalnuts (or pecans)
  12. 1 cupapple chunks, diced small

Cooking Instructions

    Preheat the oven to 375°F. Grease a standard size muffin tray or line with cupcake liners and set this aside.

    In a large bowl, whisk together the oats, baking powder, apple pie spice and cinnamon. Set this aside.

    In a medium bowl, whisk together the milk, applesauce, eggs, maple syrup, brown sugar and vanilla extract. Pour the wet ingredients into the dry and stir to combine.

    Fold in the walnuts and chopped apples. Scoop the mixture evenly into the prepared muffin tins.

    Bake for 25-30 minutes, or until they are set and a toothpick inserted into the center comes out clean. Allow them to cool completely on a wire rack before storing them.

    Store in the fridge for up to 5 days. You can eat them cold or you can wrap them individually in a damp paper towel and microwave for 45-60 seconds to heat them up.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own.
