Ingredients

  1. 8 ozElbow macaroni
  2. 2/3 cupPlain Greek yogurt
  3. 2/3 cupWhole milk
  4. 1/3 cupParmesan cheese shredded
  5. 1/3 cupFontina cheese shredded
  6. 1/3 cupMozzarella cheese shredded
  7. 2 tbspRicotta cheese
  8. 3/4 cupFire roasted tomatoes, canned
  9. 1Salt and pepper to taste

    Preheat oven to 450°F.

  2. 2

    Boil macaroni for about six minutes. drain and set aside

  3. 3

    Combine tomatoes, milk, yogurt, cheeses, salt and pepper . Heat over low until cheeses are melted, stirring constantly. Fold in macaroni noodles .

  4. 4

    Spray a 6 x 8 baking dish with nonstick spray . Pour macaroni and cheese mixture into baking dish and bake at 450°F until bubbly, 10 to 12 minutes .
