I had some bananas that were about to go bad and wanted to make some muffins for my family one morning. I looked through the freezer and decided to throw in some frozen berries, the berries made the recipe so much better and my family loved Them! They are now a Favourite lunch time Treat!

I had some bananas that were about to go bad and wanted to make some muffins for my family one morning. I looked through the freezer and decided to throw in some frozen berries, the berries made the recipe so much better and my family loved Them! They are now a Favourite lunch time Treat!

Ingredients

  1. 110 gramsbutter
  2. 1 1/2 cupsugar
  3. 1 tspvanilla
  4. 3eggs
  5. 2bananas
  6. 1 cupfrozen berries (I use raspberries and boysonberries)
  7. 2/3 cupchocolate chips
  8. 2 cupflour
  9. 1 tspbaking soda
  10. 1/2 tspsalt

Cooking Instructions

    Preheat oven to 360°F.

    In a large bowl, cream the butter and sugar together until fluffy.

    Add the eggs, vanilla and mix until well combined.

  4. 4

    Mix in the bananas, berries and chocolate chips.

  5. 5

    Sift the flour and baking soda into the wet mixture and then add salt. Stir until all the ingredients are well combined.

    Spoon the mixture into a muffin tray, lined with papers or lightly greased. Fill the cups until they are mostly full but not over flowing.

    Bake for 25 minutes, or until muffins spring back when lightly pushed. Enjoy!
