AMOUNT OF INGREDIENTS DEPENDS ON HOW MUCH YOU WANT TO MAKE.

Rinse vegetables thoroughly and cut in large chunks.

Add everything to blender and blend until smooth. If you don't have a blender, dice all veggies in small pieces and add everything to a pan on medium heat with a little EVOO and sautee until onions are translucent and veggies are soft. Make sure not to over cook, remember it will cook even more when you use it later.

If you're using a blender and prefer a thicker consistency like I do, there's no need to add water or olive oil, the vegetables have enough. But you can add liquid if you prefer a smoother consistency.

Keep a weeks amount in a closed container in the fridge. Store the rest (up to 2 months or more) in a tighly seeled plastic container in the freezer and use as needed.

Make sure you wash your blender 2-3 times with SOAP and HOT water because nobody wants garlic and onion milkshakes if you know what I mean ;-)
