Ingredients

  • 1 lbpeeled crawfish tails
  • 1 1/2 cupcooked white rice
  • 1/2 cupchopped green onions (tops only)
  • 1/2 cupchicken broth
  • 1 stickbutter
  • 1 tsptabasco sauce
  • 1 tspminced garlic
  • 1/2 tspblack pepper
  • 1 tspwhite pepper
  • 1/2 tspsalt
  • 1/2 tspcayenne pepper
  • 1/2 tspdried sweet basil leaves
  • 1/4 tspdry mustard

  1. 1

    Combine salt, pepper, cayenne, dry mustard, and basil in a bowl and set aside.

  2. 2

    Place butter, onions, and garlic in a large deep skillet. Sauté 1 minute on high.

  3. 3

    Add crawfish, Tabasco, and seasoning mix. Sauté for approximately 3-4 minutes. Stirring occasionally.

  4. 4

    Slowly add chicken stock while moving pan back and forth on burner. Cook over high heat for another 5-6 minutes. Stirring occasionally.

  5. 5

    Serve immediately over rice.
